Club Suntory brought one of Tokyo’s most exciting new bars to Sydney, giving local bartenders and hospitality professionals the chance to step into the world of Tokyo Confidential — a rooftop cocktail destination shaking up Japan’s bar scene with its bold drinks, heartfelt service, and “pull up, fess up” philosophy.
Hosted at the Suntory Bar in Prefecture 48, the day began with an exclusive trade masterclass led by Holly Graham, founder and creative director of Tokyo Confidential, alongside Natalie Ng, House of Suntory’s National Brand Ambassador. Holly — named among the World’s Top 10 Most Influential Bar Figures by Bar World 100 — shared her creative process, her approach to genuine hospitality, and how she’s built one of Tokyo’s most talked-about venues.
The masterclass gave attendees an inside look at Tokyo Confidential’s artistry and spirit, complete with tastings of Holly’s signature cocktails:

- Hokkaido High – Suntory Toki Whisky, Awamori, corn tea, mango
- Mugi Boogie – Haku Vodka, mugi shochu, coffee, soy caramel, tonka
- Glizztini – Roku Gin, mugi shochu, tomato, mezcal, onion brine, MSG
- Arigato El Gatto – Hibiki Harmony, mezcal, watermelon, chili
Among the highlights, the Mugi Boogie reimagined the espresso martini with a savoury twist of soy caramel and mugi shochu, while Arigato El Gatto showed off Hibiki Harmony’s smooth, layered character with a smoky watermelon and chili kick.
“People don’t just remember the drink — they remember how you made them feel,” said Holly. “That’s the essence of hospitality.”
As the sun set, the evening consumer takeover opened the doors to the wider community, bringing the full Tokyo Confidential experience to life in Sydney. The bar buzzed with energy as guests sipped, connected, and celebrated the craft of Japanese bartending.
