
The team behind Mille Vini is bringing refined Italian dining to Sydney’s CBD this July with the launch of Rovollo – a 40-seat dining room and wine-focused experience set to open at 25 Martin Place.
The latest venture from Esper Group, promise’s patrons will get to experience a “360-degree dining experience” defined by warmth and ambience. Expect a signature pasta flambéed tableside in a $2000 Parmigiano-Reggiano wheel, and mediterranean style, aperitivo offerings.
Esper Group director Andrew Wallace says the venue is all about intimacy and care.
“We want to give back to Sydney diners, by creating an atmosphere where people feel known, receive more than they expected and with memories that last well after they’ve walked out the door,” said Wallace.
At the heart of Rovollo’s concept is its 250-bottle wine list – a specially curated collection of Italian and local Australian drops. Guests can expect vintage Barolos, small-batch Tuscan producers, emerging Australian winemakers, and by-the-glass options.
With over 25 wines available by the glass, expect recommended pairings with each dish, wine flights, and tastings offered regularly at the chef’s table or wine room.
Inspiration for the new venue sparked while Wallace travelled through Italy’s Amalfi Coast, where he and his family experienced hospitality that he says has become harder-to-find.
“We weren’t just there for an allocated time slot. There was genuine theatre, personal touches and we left feeling like we were part of something bigger than ourselves,” said Wallace.
