
Terronia has opened in Burleigh Heads, introducing a new concept-driven cocktail bar built around the idea of a European-style square – a place designed for people to gather, drink and connect.
Founded by Mycol Cavalieri, the venue takes inspiration from the social piazzas of Europe and Latin cultures, where fountains, conversation and shared drinks form the centre of community life.
“Everywhere I’ve lived and travelled, the square is where community happens,” Cavalieri says. “In Australia, we don’t really have that same ritual space, so we built one. Terronia is our version of that feeling: the fountain, the conversation, the ease… and cocktails that push boundaries without losing soul.”

The venue is structured around four key spaces. The Fountain sits at the centre as the main social hub. The Tavolino is a small cement table designed for informal, communal drinking. The Laboratory is where the team produces ingredients in-house and develops the menu’s techniques. The Creative Studio functions as a concept space by day and an intimate private bar by night.
Terronia operates as a technique-forward cocktail bar with an in-house creation lab. The team works with local farmers, producers and artists, creating bespoke ingredients, vessels and seasonal collaborations. Each cocktail is designed as a complete experience, combining flavour, texture, presentation, and narrative.

Beyond service, Terronia is set to host masterclasses and technique-led sessions for hospitality professionals, positioning the venue as a centre for education and industry development on the Gold Coast.
