It has also been an incredible year for Australia with a new best bar in Australasia with Melbourne’s Caretaker’s Cottage rising two places to No.21, also taking home the Michter’s Art of Hospitality Award. They are joined by Sydney’s Maybe Sammy at No.26 and new entry Byrdi, in Melbourne, at No.35.

Some of the best bars from around the globe will be descending on Sydney this April for the second annual Maybe Cocktail Festival.
A wine and cocktail bar first and foremost, the large, ever-evolving list of wine by the glass has been curated by Mike Bennie of P&V Merchants with cocktails curated by the Maybe Sammy legends.
Designed to reflect ‘the wisdom of the crowds’, the Top 500 Bars developed the list based on results compiled from over two thousand sources including experts and journalists, as well as data from online reviews, search engine results and social media channels.
Within Australia, Sydney’s Maybe Sammy climbed 14 places (No. 15), being the fifth time it has been best in the continent and Melbourne’s cocktail pub Caretaker’s Cottage entered the list (No.23).

The 2023 Outstanding Contribution recipient, Stefano Catino, really needs no introduction. He has won many awards – everything from our Most Influential List #1 in 2022, to his bar Maybe Sammy making the World’s 50 Best Bars List consistently over the past few years.
From an Aussie perspective, there were some new and old faces featured in the list including Maybe Sammy, Byrdi, Continental Deli Bar Bistro, Dean & Nancy, Bar Planet and Caretaker’s Cottage.
The acquisition means PUBLIC (including Oxford House, The Strand Hotel, Lady Hampshire) and The Maybe Group (Maybe Sammy, Maybe Frank, Sammy Junior) will be able to bring venue concepts to life with exceptional food and beverage propositions.
If there’s one song that you think of when you think of Maybe Sammy, it would have to be ‘Tequila’, complimented by the in-house brass. So it’s no real surprise that for the group’s fifth outing that they would open a Mexican Cantina with Tequila at the fore.
The collaboration will see Eleven Madison Park Beverage Director Sebastian Tollius behind the iconic Sydney bar to pour a bespoke cocktail menu utilising a selection of the finest Glenfiddich whiskies on Wednesday, January 18th, from 6:00 pm until stock lasts.
