The Village Hotel (formerly the East Sydney Hotel) has recently benefited from a ‘triumphant return’ to the drinking scene. The site is sporting a new dining room and a fresh make over that has reinvigorated one of Sydney’s favourite drinking spots. Barossa Valley Wine brothers Dylan and Justine Fairweather are leading the change in direction for the iconic site. “When the offer to take over The Village came up we could not refuse,” said Dylan Fairweather. “To take on such a unique Sydney location was too good to be true. Our aim is to create a community experience celebrating great food, and unique wines.”

The venue was originally opened in 1918 as The Tradesmans Arms, and earned a reputation as the ‘blood house’ because of its colourful identities and there preference for fighting. Today however, The Village is set to cater for a new breed of Darlinghurst urbanites. Serving sensational rustic fare under the eyes of Chef Adam Spencer there are also drinks aplenty with a solid mix of current and rare wines, and cocktails. The cocktails are put together by the venues team of ‘dedicated professionals’ and showcase both classic and contemporary and can be enjoyed upstairs in the cocktail lounge replete with chesterfield sofa’s and a bar menu to match. Sit back and enjoy panoramic, cityscape views while clutching your drink.
