Union Dining is the first venture by due Nicky Riemer and Adam Cash and the pair are focusing on delivering a provincial European dining experience with an essential touch of Melbourne class. In his role as venue front-man Cash has graced such icons as, Cutler & Co, and Riemer (a chef by trade) has done stints at Ricmond Hill Café and Larder and was Head Chef at the Melbourne Wine Room.

Enjoying a corner site at Swan and Brighton Streets in Richmond, Union Dining takes a prominent position and the resulting design has created a building that stands out as a landmark, as well as a destination tippling spot. Inside heralds original timber fireplaces, marble floors and feature archways that all tap into the venue’s heritage. “Having a sense of comfort in the dining room is of the upmost importance to us,” said the duo. “We want Union Dining to be somewhere people can be themselves.”

The food is led by a seasonal charge, with as much of the ingredients sourced from local producers. Sommelier Greg Lightfoot (ex Vu de Monde and Rockpool) took responsibility for the drinks list, along with Cash, and while short it offers a focused look at boutique Victorian wines and beers as well as European notables that all go toward complimenting the menu.
