It’s nearly time for the announcement of all the finalists for the 22nd Annual Bartender Magazine Australian Bar Awards, so we are going to share with you some sneak peaks in the lead-up. Today, it’s one of the bar industry’s go-to spirits and the bars that specialise in it. Yep, it’s Tequila Bars.
Predominantly Australian gins and Japanese whiskies dominate the back bar, and here we have two cocktails from owner, Chris Wilson that showcase his two favourite spirits.
This combo took off, partly attributed to the obsession with ice at the time, which had just become readily available and highly prized. It’s been suggested that the name ‘cobbler’ may even come from the ‘cobbles’ of ice in the drink.
Being hosted at Pourpier was memorable. Raw vegetables with sulphur-free and drastically clean local white wines from Takeda Winery, wild boar spaghetti with affordable vintage Cru Beaujolais, passionate staff and condensation on the windows as it gently snowed outside.

The ability to concentrate your attention on what really matters and to continue to focus despite all of the external ‘noise’ that exists around us is becoming an increasingly difficult yet also increasingly important skill in business and in life yet in uncontrovertibly an important skill to master.
