If you’ve been looking at cocktail menus lately, you may have noticed a term popping up that you wouldn’t necessarily think belongs on a drinks list: lacto.
They’ve dived into homegrown spirits at this new bar from 2015 Bartender of the year Lee Potter Cavanagh, and native ingredients — like the wattle seed here — feature prominently on the menu.
