Well it’s an opening we’ve been waiting for all year and now the time has come. Papa Jack’s, the new bar from Marco and Emily Nunes (one half of the four owners who set up the influential Brisbane bar, Canvas) is open for business and trade by all reports is cracking along.

The bar draws on New Orleans’ rich cocktailing history and imagery. You’ll find the New Orleans fleur-de-lis (the city’s NFL team, the New Orleans Saints, use it as their emblem) popping up throughout the bar in places like on the cocktail list, or as a bang hanger sitting beneath the bar top. And on the drinks side of things you definitely get a sense of place: they’re making a Sazerac on tap, serving up a Hurricane and doing a frozen Bourbon Milk Punch on the NOLA Classics section of the drinks list.

And because New Orleans ain’t N’awlins without its food, the 60 seat restaurant and bar (which will trade from 7am to midnight and offer breakfast, lunch and dinner) is offering a bite of the bayou with such creole staples as po’boys, gumbo and beignets all making an appearance.

They’ve also assembled an impressive roster of bar talent, said Marco.

“When we started working on this project a couple of years ago we wanted to build a team with the right balance of experience, creativity and personality so I couldn’t be happier to have what we affectionately refer to as our ‘dream team’ in place and look forward to working alongside such passionate bunch of bar professionals,” he said.

“Managing Papa Jack’s bar will be Perryn Collier who most recently headed up Alfred & Constance bar. Pez joins our team of award winning bartenders who possess a wealth of international knowledge. We’ll be encouraging patrons to take a walk on the New Orleans wild-side and consider a twist on the classics.”
