The Hazy Rose to open new Brit gastropub

Sydney small bar, The Hazy Rose, is expanding into the tenancy below it on Stanley Street.

“It’s going to be called Downstairs,” said owner, Dominique Easter.

They’re expecting to open in September, with a capacity of around 60 people (the space is currently an Italian restaurant).

Easter said that Downstairs will have its own identity, but still fit in with what The Hazy Rose does upstairs.

“We still want to be cohesive with our upstairs venue, but it’s going to be a little bit more modern, and not as themed towards the 1920s,” she said.

“We’ll still keep the overriding feel — dark timber, dark colours, good service, nice drinks.”

Food is a central focus for Downstairs, she said.

“The food will be styled British gastropub, keeping in theme with the rest of The Hazy Rose,” she said, “but now you’ll actually be able to get food upstairs. We’ll be doing just a bar snacks menu up there.”

Downstairs won’t duplicate The Hazy Rose’s cocktail focus, either.

“At Downstairs we’ll have just a few cocktails available, but we’ll keep the focus on cocktails to the bar above. We’ll have more of a wine and beer focus [at Downstairs].”
