Well, it’s nice to see gin proving so popular these days, particularly in Sydney. Joining other Sydney gin joints like York Street’s The Barber Shop and The Rook, and Potts Point newcomer The Powder Keg, is new Double Bay bar, Stillery.
Located on the first floor inside the revamped InterContinental Hotel Double Bay, Stillery is the boozy partner to its sister restaurant, Stockroom.
Aiming to get away from the typical hotel bar model, gin is front and centre of what they do here: they have a range of vintage, rare, and craft gins at the swanky, handsome bar, and the cocktail list goes all in on the gin too. They’ve got a number of twists on gin classics (like the Southside and the Last Word) along with some signature creations, and the menu is divvied up into six gin cocktail sections: citrus, herbaceous, vegetal, spice, stirred, and gin tea party (for punches for more than six people).
It’s nice to see the public wanting gin, the most ancient of flavoured vodkas.
