
Friday 11 April, Perth’s newly revamped ibis Hotel on Murray Street, celebrates its grand opening of Chelsea Social, and is creating high expectations of what a hotel bar can be, starting with the drink’s menu.
Behind the venue is General Manager Sandy Lombardi, who brings his expertise in hospitality details and service, making the bar the centre of the space, and the cocktails the highlight of the menu.
The cocktail menu leans into London energy with a Perth twist, with clean builds and creative tweaks. A dirty house Martini, punchy signature Negroni, and a crisp rework of the Pimm’s Cup are just the start.
“Our goal was to make the bar the heartbeat of the space. We didn’t want to hide the cocktails behind the food — we wanted them to lead,” said Lombardi.
Chelsea Social is open early for breakfast and late into the night. With all-day dining and a nod to British comfort food. The grand opening will greet guests with complimentary chelsea buns throughout the morning, and a live DJ to set the tone.
