Fraser Short (pictured above right), partnered by Sean Connolly (ex-Astral, Sydney) has re-launched The Brooklyn Hotel as The Morrison Bar and Oyster Room giving Sydney’s bustling George Street a premium drink and dine offering in time for the summer rush. What’s on offer is set to bring a whole new dynamic to the location, with chef and business partner Sean Connolly offering casual, accessible New York brasserie style food. “It’s a modern eatery,” said the pair, “we will be showcasing a lot of food cooked on the bone and served in the shell; there is a full oyster program set in place as well.” Short confirmed that the drinks offering is high on the priority list too with top notch cocktails on offer and a quality wine list put together by Micheal Block (ex-Bridge Room, Sydney). With crowds already flocking to The Morrison, it’s the perfect place to host the Bar Week launch event as well!
