We’re wondering why this hasn’t been done before. As we talk about in this month’s Trend section, food and drink are hand in glove more than ever before. And right on-trend comes Lotus Dumpling Bar, due to be open June.

The partners, Michael Jiang, Haiden Walsh, and Kirstie Brown have recruited former Firefly manager, Led Emmett to craft the vision for the venue. The wine list is heavy on international listings, “with it being Chinese dumplings, we need wines with a little more spice, a little more sweetness,” said Emmett.

“We’re not trying to reinvent the wheel, we’re just trying to do good food at a reasonable price in a good location.”

The chef was hired from Brisbane. Chinese-born Lucy Luo, “makes the best dumplings I’ve ever had in my life,” said Emmett. Cocktails will make an appearance too, drawing on Asian-inspired flavours to complement the food.
