Della Hyde: a new bar coming from Applejack

The lads from Applejack Hospitality have announced their fifth venue in just four years: Della Hyde.

Located at the city end of Sydney’s Oxford Street and in the basement of the building that once housed Q Bar, Hamish Watts and Ben Carroll want Della Hyde to mine some of that old time, hotel lobby bar feel for this next venue.

“We like the idea that the Della Hyde site was ‘apparently’ once a grand hotel situated on Hyde Park and named after the famous American actress Della Pringle,” said Watts in a statement to media. “We’ve taken design inspiration and a bit of artistic license from that- we reckon it would have had a touch of opulence based on the Hawa Mahal or ‘Pink Palace’ in Jaipur, India and that maybe it was a member of the revered ‘Society of Crossed Keys’. That’s our story and we’re sticking to it!”

On board as general manager for the new venue is former SoCal bar manager (and occasional Australian Bartender contributor) Joe Worthington. Worthington, along with Applejack group bars manager Lachy Sturrock, is responsible for the cocktail list in the new venue.

The Applejack Hospitality group has had a oft-stated desire to open five bars in five years, and Della Hyde follows on from the recent success of The Butler in Potts Point. They also own Bondi Hardware, The Botanist, and SoCal in Neutral Bay.

The new bar opens November 25 and will be located at 34 Oxford Street, Sydney. They’ll be open from 5pm until late, seven days a week.
