Reece Griffiths on board for new Sydney restaurant Chula

When it comes to Sydney Mexican venues, you know you’re going to get a proper taste of Mexico when Nicole Galloway and Peter Lew, of Barrio Cellar (one of this country’s 10 best tequila bars), are involved.

But when their new Sydney restaurant Chula opens in mid-October, they’ve got an extra boost of talent with Agave Cartel founder and one of the country’s most knowledgeable agave aficionados, Reece Griffiths, heading up the drinks program.

Chula will open on the site of the former Hugo’s Bar Pizza, and represents a homecoming of sorts for the ownership duo — it was on this street (and across the road) in Kings Cross that their first venue, Barrio Chino, was situated.

The food will celebrate the regionality of Mexican cuisine, with the design taking its inspiration from the streets of Tulum and Acapulco.

Griffiths is focusing the drinks menu on agave-driven cocktails and incorporating ingredients indigenous to Mexico, and given he’s one this country’s most passionate advocates for the culture of Mexico’s varying regions, it’s something that we for one will be looking forward to.
