Australia’s leading luxury whisky distiller LARK Distilling Co. has unveiled its Signature Collection of four exceptional and pioneering whiskies, crafted for the next generation of whisky drinkers and seamlessly merging LARK’s trailblazing past with the new world.
The new LARK Signature Collection features the multi award-winning Classic Cask Single Malt Whisky, the chinotto-kissed Rebellion Single Malt Whisky, the lightly smoked Tasmanian Peated Single Malt Whisky and the bold and brazen Classic Cask Strength Single Malt Whisky.
Matured in Tasmania’s dramatic south where the unique seasonal climate and clean air produce complex flavours and textures, every single LARK barrel has been carefully selected by hand to deliver a special, new world whisky experience.

ABV: 44%. Nose: Zesty orange with custard and lemon meringue pie. Palate: Candied citrus peel, vibrant cola and buttery malt developing towards soft orange custard and a dusting of cinnamon. Finish: Lemon meringue pie with flashes of zest and spice.

LARK Classic Cask Single Malt Whisky: This multi award-winning dram is an everyday luxury that is a hallmark of quality, new-world Australian whisky. A true labour of love from the moment it leaves the LARK stills to the moment the cork is popped. Classic Cask is based on Bill Lark’s original recipe with notes of citrus and rich plum pudding and a hint of Tasmanian peat. The recipient of numerous local and international awards, this bottle is signed by LARK Founder and Global Ambassador Bill Lark.
ABV: 43%. Nose: Toffee apple with crisp citrus and custard, with subtle floral oak. Palate: Fruity malt and rich plum pudding with developing apple crumble and red berries. Finish: Viscous and dessert-driven with a crescendo of old tawny oak.

LARK Tasmanian Peated Single Malt Whisky: This unique, lightly peated blend is made using an innovative, post-malt smoking process which gives the whisky softer, new-world characteristics while honouring the highland traditions. LARK boasts its own peat bog in Tasmanian Highlands and born from fire and fervour, LARK Tasmanian Peated demonstrates where there’s smoke, there’s feeling. It’s a meeting of the pure Tasmanian environment and experimental character of its creators. Signed by LARK master Blender Chris Thomson representing his mark on the new world of whisky.
ABV: 46%. Nose: Earthy peat intertwined with a delicate floral character and sea spray. Palate: Floral peat develops amongst dark chocolate and oyster shell, with hints of coffee and marmalade.
Finish: Ginger snap, sea spray and subtle ash.

LARK Classic Cask Strength Single Malt Whisky: Cask Strength pays its respects to the old as it steps boldly into the new. This is an adventurous spirit, artfully distilled and aged in a considered selection of small casks, creating liquid gold. This award-winning bottle is signed by LARK Founder and Global Ambassador Bill Lark, representing his mark and legacy when it comes to the new world of Tasmanian whisky.
ABV: 58%. Nose: A light oak spice surrounded by dense buttery malt, sweet orange and rich red fruits. Golden syrup dumplings dusted with cinnamon; creamy vanilla followed by fruity plum pudding. Finish: Long and rewarding, with dark chocolate and marzipan.
