Anneliese Grazioli is opening her second bar this week in Darwin. Here’s the lowdown.

Slated to open this Thursday, 19th October is Bar Kokomo, a rum bar from Anneliese Grazioli and the team that brought you Hanky Panky Lounge.

Bar Kokomo is Darwin’s first rum bar, inspired by all things rum with a strong focus on the Caribbean. After all, the climate and lifestyle of Darwin are perfectly suited to all things rum. The bar accommodates 90 people and boasts food and drinks inspired by each rum and the seasonal tropical fruit of Darwin.

The bar team is headed up by owner, Anneliese, bar manager Pouya Khoshtarash (who recently left the Mindil Beach Casino) and assistant bar manager Matt Zarimis (Hot Tamale). This is Anneliese’s second bar with business partners David & Kellie Robinson who partnered with her on Hanky Panky Lounge after she worked with them for many years at Hot Tamale.

The bar accommodates 90 people and boasts food and drinks inspired by each rum and the seasonal tropical fruit of Darwin.

The drinks menu focuses heavily on the specific types of rum or rhum agricole and layers in bright and simple flavours to bring the drink to life and showcase what makes each of them so unique. Anneliese says: “The menu hosts a ‘Daiquiri, Your Way’ section which gives the guests the opportunity to build their own daiquiri in a way they can enjoy with a little help from the bar team.”

Bar Kokomo’s kitchen will be serving great dishes that are inspired by the flavours of the Caribbean, Central & South America with some ingredients sourced locally. Chef Pablo (formerly Bodega, Brix Distillers) is originally from Chile and moved to Darwin after visiting for a holiday and is excited to add some Caribbean flair to the menu.
