Curate opens in Perth’s Northbridge, blending art with cocktails

Perth’s city of Northbridge has welcomed a new addition to its nightlife scene with the opening of Curate; a cocktail bar and dining space perched inside DoubleTree by Hilton.

Shifting the experience of a standard bar, Curate leans into creativity with an art-inspired cocktail list, a menu designed for pairing, and a space intended to connect locals, travellers, and creatives.

Bar Manager William Brechin has curated a drinks program divided into four “artist collectives” – Picasso, Banksy, Van Gogh and Da Vinci – each reflecting a different flavour profile. With over a decade of bartending experience across Perth, Brechin says his passion began with a gifted bar book, which sparked his fascination with flavour pairing.

Curated cocktails include the La Lychee a sweet and sour martini, featuring – Tanqueray gin, lillet Blanc, lychee, botanicals and yuzu, while the Volare showcases floral and fruity notes blending Tanqueray gin, jalapeno, grapefruit, elderflower, and foam.

In the kitchen, Head Chef Chinmay Dandekar brings international experience from kitchens including Dubai’s Burj Al Arab and London’s Outlaw’s at the Capital. His menu is tight and expressive, built to complement the bar program. Highlights include ahi tuna with edamame salad and yuzu dressing, slow-cooked lamb bulgogi and kimchi cigar with gochujang emulsion, and crispy pistachio and sundried tomato arancini with lemon mayo.

“Every cocktail tells a story, every plate sparks conversation, and every night has its own rhythm,” said Brechin.
