Launch of Big Rig Diner at Ruby Rabbit

Big Rig Diner at Ruby Rabbit officially opened for business last week with a bumper launch party (see pix below).

Head chef Zachary Sykes created a fantastic sampler menu for last night’s launch which included mini Big Rig hotdogs with spicy sausage, caramelised onion, brie and tomato chilli jam, mini Big Rig beef burgers with beetroot relish, horseradish mayonnaise and watercress, Jack Daniels chilli tortillas with guacamole, caramelised pumpkin and sage bubble and squeak on toast and sirloin steak with mashed potato and gravy. To wash it all down guests enjoyed punchy margaritas from El Jimador, Jack Daniels cocktails and Miller beer.

Owners Paul Schell and Phil Cawood even welcomed guests with a huge Big Rig truck pulled up out front of the roadside inspired eatery.

The restaurant is now open for dinner and welcomes guests well into the early hours of the morning, whether it be for an incognito bite at the open kitchen counter or a gathering of friends packed into one of their individually themed wooden booths.
