The Ghanem Group has recently celebrated the opening of the group’s latest venture, Byblos Melbourne. The two level venue is located in Melbourne’s central business district within the new WTC Wharf dining precinct and builds upon the success of its sister business, the iconic Brisbane venue Byblos Bar & Restaurant.
Ghanem Group General Manager William Balleau describes the venture as the group’s most ambitious project. “Byblos Melbourne is the result of over 12 months of conceptualizing, 6 months of building and countless hours of brainstorming. It was a very exciting build and we are all extremely impressed with the results.”
“We view our beverage list as a cornerstone of the Byblos business model,” says Balleau. “The Melbourne venue will match Brisbane’s world class collection of spirits and liqueurs and surpass the original in the areas of wine and beer. We were able to build some great relationships with boutique wine suppliers though 5ifth Element and made the most of those contacts as we put together the Melbourne cellar.”
“Being recent arrivals in Melbourne, we thought it important to build a team of established locals with existing relationships with guests, suppliers and colleagues,” Balleau explained.
