Easy Eight is the latest addition to what must be Sydney’s most populated ‘hard to find’ laneway.
Sitting just steps away from both The Baxter Inn and The Barber Shop, this bar is the new one from the team behind Sydney’s Mojo Record Bar.
Led by manager Adam Hadad, whom you may have last seen at Mojo, or prior to that at The Wild Rover, Easy Eight puts the emphasis squarely on drinks and food working hand in hand.
With that in mind, there’s booth seating lining the wall, and you could do worse than finding a perch at the classic, diner style linoleum counter.
The cocktails are less about big, bitter, bartender drinks and more about being approachable — take the Ultima, for example. Sure there’s Yellow Chartreuse and tequila in the mix, but’s balanced nicely with maraschino and lemon for an agave-fied riff on The Last Word.
