Filipino culture meets contemporary mixology with the launch of Inuman, Melbourne’s first Filipino cocktail bar, which opened on November 1, 2024. Perched atop its sibling restaurant, Askal, right in the heart of the city, Inuman brings a fresh cultural experience to Melbourne’s cocktail scene.

Ralph Libo-On, co-founder and Bar Director, teams up with John Rivera, co-founder and Culinary Director, to create a menu that masterfully blends tradition with innovation. Inuman pays homage to Filipino mixology while pushing boundaries with bold flavours and creative presentations. Each cocktail has a story, reimagining classic Filipino recipes with a modern twist.

Named after the Tagalog word for “drinking,” Inuman celebrates the Filipino tradition of gathering over drinks. It’s not just a bar, it’s an immersive cultural experience, combining impeccable service with the vibrant flavours and spirit of the Philippines.

Signature cocktails include the Paeroa Hard, a citrusy blend of Starward Honeycomb Whisky, Filipino tapuy rice wine, and lemon—Inuman’s take on the iconic L&P soda from Aotearoa. The Tito Ray honours Filipino bartending legend Ray Buhen, with Estancia Raicilla, durian, and calamansi. For a decadent twist, the Boba Blind Pig combines Stolen Rum with ube halaya milk and rum caramel boba, offering a playful nod to speakeasy culture.

John Rivera’s food menu showcases refined Filipino flavours, featuring dishes like duck liver parfait with feijoa preserve and toasted Binondo doughnut, oysters with sinamak granita, and chilli garlic fried almonds.

Inuman also offers local wines and beers from Australia, New Zealand, and the Philippines, plus non-alcoholic options with Filipino twists, all within a welcoming rooftop setting that offers stunning views of Melbourne’s skyline.
