“Cocktail-wise we will be repurposing a lot of ingredient ‘waste’ from Maybe Mae and the Shobosho kitchen,” Margan says. “There will be no Boston shakers, with everything batched and built – [for] minimal perishable usage.”
Influential Adelaide bar, Cushdy, is set to close its doors forever at the end of September, citing a long standing struggle with location as the chief factor in its closure.
With new bar legislation looking like it will come into effect in March, Adelaide looks set to become the next Australian cocktail destination. Looking to lead that charge is The Collins, the new bar opening soon at the Hilton, smack bang in the middle of the city. We got a look at the bar last week and were impressed with what we saw — the decor is sharp and the back bar is taking shape.
It used to be a sterile office space all one shade of white – white walls, white ceilings, fluorescent office light. The very definition of bland, monochrome and uniform. But this space, now home to Udaberri, is much more than that: deep warm-toned timber floors, below exposed ceilings and brick wall, while chesterfield lounges and communal tables provide space to relax.
