Bulletin Place has been a breath of fresh air in the Sydney CBD thanks to the focus on fresh produce — their five strong list of cocktails is determined by what is the best fruit at the market each day. It’s an approach that chefs have taken for some time, as bartender and co-owner Tim Philips will tell you.
We stopped by new Sydney bar, Bulletin Place, to catch up with bartender and co-owner Tim Philips — whom you may have heard of — and asked him about what makes a good cocktail list.
No one that we know of is putting sherry out there in as big a way that these guys are. There is a groundswell of interest building in all things Jerez in the States (bartenders like The Columbia Room’s Derek Brown have been raving about it for a while now) and we’re seeing the local winos talking about it more and more, particularly the Equipos Navazos bottlings which you can find here at Tapavino.
The new bar from Tim Phillips, Adi Ruiz, and Robb Sloan, Bulletin Place, is taking shape. A small, intimate 50-seat number, the boys are keen totake that approach to their drinks too, doing away with a traditional back bar.
