Gilt Lounge is tucked away above Gowings Bar & Dining in the quirky QT Hotel, Sydney. It is luxurious, it is exclusive, but don’t take that as bywords for a lazy bar program – this place has invested seriously in doing drinks and drinks service well. The bar is run by Jared Thibault, an American import, and they are bringing spirits heretofore unavailable in Australia. They’ve picked up a star recruit in Taka Shino (ex-Eau de Vie) who buttresses an already pro team. Get here for bottles of booze you won’t find in other bars (they bring in a bunch from sites like the UK’s Whisky Exchange – give the Death’s Door gin a crack) and a cocktail list that draws heavily on the classics and bespoke, tailor-made ingredients.
