New vermouth bar, Banksii, to open in Sydney

The team behind Surry Hills’ Bar H, Hamish Ingham and Rebecca Lines are set to open a new bar and bistro down by the water at the Barangaroo development, called Banksii.

The name is a nod to Joseph Banks, the botanist that cruised about with Captain Cook, and that inspiration flows through to the drinks and eats.

The drinks side of the equation will focus on vermouth — a welcome development if you ask us, given the wide array of vermouth available on the market today.

They’re working with Australian producer, Maidenii, to create a custom-made vermouth that will be served on tap and only at Banksii.

In addition to this, there’ll be 40-plus vermouths available for you to get stuck into, along with a food offering from chef Ingham that is influenced my Mediterranean flavours with a big focus on botanicals.


Banks is set to open on the Streets of Barangaroo in September this year.
