Go inside Hacienda, Circular Quay’s luxe new bar


What do you do when you’ve easily nailed your target of opening up five venues within five years? You might like to collaborate — as Sydney hospitality group Applejack Hospitality has — on the opening of a swish new bar with scenic harbourside vistas.

Called Hacienda, this new Sydney bar sits in the Pullman Quay Grand Sydney Harbour and has priceless views, a fresh refit (drawing on the plantation era of Cuba and the Miami of the luxe 1950’s), and a rum-focused cocktail list.

Being a bartender, you’ll appreciate the Hacienda Bottled Mojito (white rum, creme de menthe, lime, mint, falernum, and orange bitters), whereby the minty goodness of a Mojito is delivered to you quick order; we also like the look of the Old Presidente, too.

Overseeing the bar is food and beverage manager Adam Leonardi — Hacienda can be found inside the Pullman Quay Grand Sydney Harbour at 61 Macquarie Street Circular Quay. Take a look inside at the old Miami glamour below.
