The PS40 Australia Day menu will raise funds for indigenous communities

PS40 co-owner Michael Chiem was the 2016 Bartender of the Year.
Yesterday we highlighted Melbourne bar Black Pearl’s great Australia Day cocktail list; today, here’s the list and what’s in store at Sydney bar PS40, the reigning Cocktail List of the Year bar.

The PS40 Australia Day menu is a ripper. Not only will you get the PS40 approach thrown at the drinks, but you’ll get to indulge in the civilising institution that is the sausage sizzle, held in the laneway outside the bar. There, the Mama Chiem’s Viet Sausage will set you back five bucks and comes with your choice of a distinctly Australian condiment: wattle hot sauce (yes, please), spiced quandong chutney, or bush tomato relish.

The drinks are employing a host of native Australian botanicals — wattle seed gets a good run, so too bush tomato and anise myrtle — and of course you’ve got PS40’s sodas available, too.

The best part of what PS40 is doing, though? Proceeds from the sizzle will go towards developing indigenous communities.

That’s an Australia Day event we can get behind.
