Sydney’s new Garden Brasserie opened its doors on Anzac Day this year. The new venture occupies a Neutral Bay site that has been vacant for the past six months but which once held an Italian restaurant. The trio of owners – Sebastian Gallery, Stephen Gellert and Glenn Ferguson – come from various backgrounds. Gallery is the ex- manager of Watershed and Cohi Bar in Darling Harbour whilst Gellert also owns Cantina Bar and Grill, and Pizza Mario. Ferguson on the other hand is the owner of ISEC and HALO security.

The Patron Spirits Company have decided to take on the luxury vodka market with the release of Ultimat Vodka. Produced in Poland, Ultimat uses a trio of grains (wheat, rye and potato) to create this unique luxury spirit. The wheat is utilised to create a smooth texture, the rye to yield complexity and the potato for richness.

Ravál located at the top of the stairs above Sydney’s historic Macquarie Hotel (or ‘The Mac’ as it is popularly known) is named after Barcelona’s infamous nightspot El Ravál; an area bordering La Rambla know for its cabaret, nightclubs, and more lascivious businesses of the night.
Admittedly wine releases aren’t what we usually focus on in these pages, but when we got the call from Nathan Cairns about his family wine label ‘Bye’s’ we thought we’d make an exception. Nathan, for those of you old enough to remember, was one of Sydney’s original cocktail bartenders who set up Longrain’s bar in 1999. Furthermore, Nathan was featured in Bartender magazine for being second runner-up in Bartender of the Year (while at Middle Bar) at the inaugural Australian Bar Awards in 2001.
The Deconstructed team who previously oversaw the revamp of the Shelbourne Hotel in Sydney’s CBD have embarked upon a new venture; the City Hotel or just ‘The City’ as they envisage the venue becoming known. The launch event for step one of the project is set for tomorrow night.
