Not only has Hello Sailor been one of the more talked about Sydney bar openings of this year, it’s also lent its name to a verb (one that shouldn’t need much in the way of explanation). Indeed, thanks to Marco Faraone, Luke Redington and Mike Edkins it is now possible to go and get “sailor’d”.

It takes the place of the old Rambutan, on which a Japanese izakaya style bar, Kaya Sydney, had a brief run. Descend the stairs (or enter via the back lane) and you’ll find the bar kitted out with all the nautical trimmings one might expect from a joint called Hello Sailor. The nautical theme follows through to the craft beers on offer (you’l be happy downing a few Anchor Steams) and in terms of pure, late-night drinking food you won’t find much better than the club sandwich the guys are doing — we’re hard-pressed to name another dish that soaks up the tequila and beers in a more satisfying fashion than this one.

With drinks, food and bartenders this good, it looks like the Hello Sailor lads are in for the long haul.
