This Saturday night marks the rebirth of the site upon which Melbourne cocktailing institution, Der Raum, once stood. While Der Raum is moving to Munich, Bar Economico is being raised in its place. “The site is too special to me to sell,” said owner, Matt Bax, “so I wanted to give it a new life and it needed to be different to get away from the shadow of Der Raum.”
Australian Bartender got to know Mr Lambert, a two-time Bartender of the Year in Ireland and who previously ran the award-winning Merchant Hotel in Belfast, through his vocal and sometimes controversial opinions on Twitter (others would say he just calls it as he sees it). This is the newest offering from Matt Bax (executive bartender & owner Der Raum, Melbourne) and like his well established and award wining cocktail bar this latest venture focuses on the finer touch, and offering an intimate experience that you might have expected in a bygone era.
Der Raum have fended off winter’s chill by running hot in this year’s Australian Bar Awards nominations and by releasing more smoking additions to their cocktail program.
