Award winning sommelier Glen Davis and hatted chef Eugenio Maiale have joined forces to open this cosy wine bar and eatery on Victoria Road’s ever-growing little Italy. Maiale and Davis are attempting to challenge Sydney’s traditional ideas about eating and drinking in the city; neither a bar nor a restaurant, Omerta is instead an intimate home away from home where patrons can enjoy authentic Italian food and great wine. Forget the Mafia connotations Mailale informs us that Omerta is “a place where the staff know your name and you feel completely at home – ‘omerta’ means a merging of families.” A close member of this family is sommelier Glen Davis, who has created an extensive, but unpretentious wine list consisting of 80 Mediterranean and cool climate Australian wines to enjoy with Mailale’s share plates featuring hot-coal cooking and mixed salads – like the red cabbage, raisin, dolce latte and balsamic – inspired by the chef’s home of Abruzzo. Omerta is just across the road from Maiale’s A Tavola a successful pint-sized venue in its own right.
