Brunswick Mess Hall? Yes, please…

Brought to you by owners Aaron Whitney and Andy Emans (of Melbourne’s Murmur fame), the delightfully hipster-looking menu lists its beer sections as “A little bit of Punch”, “Cidery Goodness”, “Drink it all Night”, and “The only light beer”. They even have a section devoted to longnecks, called “Just a couple”. Indeed.

The Butterworth

The Butterworth, in the heart of Perth’s CBD and located in Exchange Plaza, has been kicking goals with the food, but it’s the drinks that we’re interested in — and with good reason. The cocktail bar is headed up by Mike de Vos (check out our Introducing section this issue) who is lending the skills he’s used at Luxe and Bobeche while he waits for his own bar to get up off the ground.

The Town Mouse comes to Carlton

We broke the news in our November issue that celebrated Wellington operator, Christian McCabe, was setting up shop in Melbourne. His new venue, The Town Mouse, opened just before Easter in Carlton, on the old Embrasse site. McCabe has teamed up with his sister, Amber McCabe (Longrain) and Jay Comesky of Melbourne’s St Ali to run the front of house.

Young Henry’s opening a new bar in the ‘Loo

Woolloomoo has a new bar brewing that’s a creative collaboration between Oscar McMahon from Newtown’s Young Henry’s brewery (pictured), Jack Brown (ex-owner Chingalings and hospitality business consultant), with Alex Watts and Nick Watney from Camperdown’s Runcible Spoon.

Fourth Wall

Back in our June issue we brought you the news that this bar from Chris Denman (who placed 2nd to Jason Williams in the Bartender Magazine 2010 Bartender of the Year competition) and partner Stevie Wright would be coming. Its been open a few months now, and things are going well.

Gilt Lounge

Gilt Lounge is tucked away above Gowings Bar & Dining in the quirky QT Hotel, Sydney. It is luxurious, it is exclusive, but don’t take that as bywords for a lazy bar program – this place has invested seriously in doing drinks and drinks service well.

Bob’s Bar at Print Hall

It seems Bob Hawke is having a bit of a renaissance in the eyes of Australian drinkers – first, by christening the Workers in Balmain, and now as a part of the Print Hall venture that took over the The West Australian newspaper’s former headquarters (and including a $2.5m wine program). Bob’s Bar is adorned with the wise words muttered by the man himself: “Any boss who sacks anyone for not turning up to work today is a bum!”

Take a look down the rabbit hole

Molecular mixology, modernist mixology – call it what you will, the fad became a trend which has now become a permanent part of a bartender’s repertoire. And at The Rabbit Hole, they’re doubling down on modernist techniques, which form the basis of a lot of their drinks.

The Workers

Old Hawkie was the key attraction at the opening of this new Balmain bar on the site of the old trades and labourers hall from the 1890’s. Indeed the bar takes it cues from Balmain’s long history with the Labor party, and the images of Labor leaders of the past adorn the ceiling.
