Paris is the next leg for the Merivale Empire with Bar Felix opening in December of 2010. Adding a French touch to the already successful Ash Street laneway phenomenon, Head Chef Lauren Murdoch is heading up the ‘chic-Parisian-style’ brasserie. Decked out with Parisian subway tiles, a pewter bar, American oak paneling and chandeliers imported from France the belle epoch is set to make its mark once again and there is sure to be absinthe and Champagne flowing.
Jean Munos (ex-Lincoln bartender) is heading up the bar team at Felix. A collaborative effort by award winning Merivale bar team saw Munos, Mike Enright (Merivale Group Bars manager) and Sebastien Derbomez (Hemmesphere) all worked together on the cocktails, Tim Greening (ex-Bootleg Bar bartender) has heading there as well; a sure recipe for success. The Felix martini; Belvedere Orange, Maraschino Liqueur, Orgeat, Peychaud Bitters shaken with fresh rock melon – sounds tempting.
