Port has found its way in to cocktails since the days of Harry Johnson and Jerry Thomas, with mentions of port-based drinks in both the Bon Vivants Companion and a healthy 36 mentions in Johnson’s Bartender’s Manual. They list Port Wine Flips and Port Sangarees; Port then was a staple of the bar. Nowadays Port has fallen from favour.

The Butterworth, in the heart of Perth’s CBD and located in Exchange Plaza, has been kicking goals with the food, but it’s the drinks that we’re interested in — and with good reason. The cocktail bar is headed up by Mike de Vos (check out our Introducing section this issue) who is lending the skills he’s used at Luxe and Bobeche while he waits for his own bar to get up off the ground.
No one really knows who invented the Martinez. Big shock there. Some say it’s named for a guy called Martinez who whipped together some gin and vermouth. Others credit it to the Granddaddy of all things bartending, the Professor Jerry Thomas who created it for a fella who travelled to Martinez, California every day.
The folks at Posi Pour are inviting bars to get creative and submit a signature cocktail using their range of 1883 Gourmet French Syrups. The winning signature cocktail will be showcased in Australian Bartender’s Staffies page along with the bartender’s name and venue. The winning bar will pick up a dozen 1883 Gourmet French Syrups of their choice while the bartender who came up with the drink will receive a gift bag of assorted bar utensils.
It’s January, 1986, and a young Tomas Estes — and a younger Phil Bayly — are driving around East Los Angeles.

Ah, March; the start of Autumn. Leaves are falling, and so too the drinkers packing the pubs on St Patrick’s Day. On the 17th of March the Irish pubs will be full with Paddys, Guinness a-pouring, a sea of green and streams of whiskey flowing. But there won’t be a lot of cocktails.

It used to be, only a few years ago, that a night out in Manly, home of the silvertails, sandy beaches and surfers, involved heading down to the Corso and into a big ol’ beer barn. There’d you’d order beer, if you were a guy (it’s a beer barn, after all), and you were likely wearing a T-shirt.
Which is not to say that is bad, because there is a time and a place for that. But that was all there was. And it couldn’t be further from the truth today.
