There have been a number of personnel changes taking place at Sydney’s Merivale, among them the departure of long-time group bars manager Mike Enright (who has opened up The Barber Shop since his departure). But in big news for Merivale and Sydney drinking, the UK’s drinks maven Paul Mant is stepping into the role.
“I was still in London when I heard about the exciting opportunity to join Merivale and jumped at the chance to be part of the team,” said Mant.
“Right now, Sydney has one of the most exciting bar scenes on the planet and I’m thrilled to be working in a company that is true innovative leader and pioneer in its field,” he said.
Mant is well known in the bar scene internationally. He has 15 years experience behind the stick and has worked renowned London bars like Mahiki and Quo Vadis, and was previously running his own bar and events consultancy, Heads Hearts & Tails in the UK. Notably, it was Mant’s challenge to fellow bartender, Tim Stones, about who could sling drinks quicker that kickstarted the first ever Rematch!!! Beeyatch!!! which has since been staged by bartenders throughout the world.
